Grilled Peri Peri Chicken with Roasted Vegetables & Fluffy Rice
A flavorful and vibrant dish featuring marinated chicken grilled to perfection, paired with roasted vegetables and aromatic basmati rice. Ingredients

1 chicken, cut

4 tbsp Sanam Peri Peri spice

2 tbsp Sanam Lemon & Pepper

2 tbsp Apple cider vinegar / white vinegar

1 tsp red chili powder
-
2 tsp crushed cumin
-
1 and 1/2 tsp salt

4 tbsp olive oil
-
2 tbsp tomato paste
-
1 green chili, crushed
-
10 cloves of garlic
-
2 tomatoes
-
1 red bell pepper
-
1 white onion
Roasted Vegetables
-
1 kg vegetables of your choice

3 tbsp Sanam Portuguese Seasoning

3 tbsp olive oil
Rice
-
3 cups Basmati rice
-
1 cup chicken marinade (See below)

1/2 cup olive oil
Directions
Chicken
Roast tomatoes, bell pepper, onion and garlic.
Blend roasted items with Sanam Peri Peri, Sanam Lemon & Pepper, crushed green chili, vinegar, olive oil and tomato paste.
Set aside 1 cup of chicken marinade for rice
Marinate chicken in marinade for minimum 3 hours.
Grill in oven on 375°F until fully cooked.
Roasted Vegetables
Marinate vegetables in olive oil and Sanam Portuguese seasoning.
Roast vegetables in oven on 375°F until fully cooked.
Rice
Boil 3 cups of Basmati rice and drain.
Cook 1 cup of chicken marinade (from earlier) in pot with ½ cup olive oil.
Once marinade is cooked, take about 4 tbsp out of the pot and set aside.
Place the rice into a pot with the marinade and mix slowly.
Pour the 4 tbsp cooked marinade on top of the rice.
Cook rice in oven at 375°F for ½ hour or until fully cooked
Place chicken and roasted vegetables on top of the rice. Serve hot.
