For 1 kg veal or mutton, create a marinade using 3 tbsp Sanam Veal/Mutton Biryani Masala, 4 crushed tomatoes, ½ cup fried onions, 1 tbsp sliced green chilies, 1 tbsp ginger & garlic paste, and ½ cup cooking oil. Heat in a pot, add meat, and cook until tender. Add 1 cup plain yogurt and simmer until the oil separates. Fry 2–3 potatoes (cut into cubes) separately and add with cooked rice. Boil 750 g basmati rice until 80% cooked. Layer rice and meat mixture with lemon slices, fried onions, and saffron water. Cover and steam (dum) until fully cooked.

Pour 1 kg de veau ou de mouton, préparez une marinade avec 3 c. à soupe de Sanam Veal/Mutton Biryani Masala, 4 tomates écrasées, ½ tasse d’oignons frits, 1 c. à soupe de piments verts tranchés, 1 c. à soupe de pâte de gingembre et d’ail, et ½ tasse d’huile de cuisson. Faire chauffer, ajouter la viande et cuire jusqu’à tendreté. Ajouter 1 tasse de yogourt nature et laisser mijoter jusqu’à ce que l’huile se sépare. Faire frire séparément 2–3 pommes de terre coupées en cubes. Faire bouillir 750 g de riz basmati jusqu’à 80 % de cuisson. Disposer en couches le riz et le mélange de viande avec des tranches de citron, des oignons frits et de l’eau au safran. Couvrir et cuire à l’étouffée jusqu’à cuisson complète.
